    Default Cat Fish

What's the best way to prepare and cook cat fish. Early this year I tried one and I think the night crawlers would of tasted better. Caught a 32" last week
but from what I have heard the big ones are not the good eaters. Thank you.

I have gutted, cut the heads off, brined and smoked them. Quite tasty. Have also filleted them, coated with a cornmeal mix and fried them in oil. Also real good. I generally keep 14-20 inchers as they seem to be the best eating. Like you found out, the big guys have a muddy taste to them. I've heard of people putting them in a stock tank to swim around for 3-4 days in clear water to clean them out, but unless your a Farmer, who has a stock tank? You could do the same with a bathtub but that usually ends up in a bitter dispute with your better half. Especially if she steps in for a shower without looking 1st ;-)
